No Meat, No Problem!
Pictured here is a Vegetarian Tostada topped with so much flavor you don’t even miss the meat! I started with lightly frying a corn tortilla on both sides, then I spreaded a layer of refried beans (for this one I used leftover beans that I had cooked a couple of days before and just mashed them). Chopped up some curly leaf lettuce and tomatoes from my garden. Sprinkled on some parmesan cheese because I didn’t have any coquita cheese at that time and topped it with salsa (I used bottle salsa because it was quicker than making it… I was hungry!) and lastly dolloped sour cream on top! I can’t even begin to tell you how delicious it was! It was quick, I had all the ingredients already. Not only did it taste fantastic it looked stunning (to me anyway)! This was something that I would have happily paid a pretty penny for in a restaurant! It was so good that I made two for me and two for my daughter! What I truly love and appreciate about this is the flexibility of making it based off the ingredients you have at the time. While I am a meat eater I don’t always need meat with my meals. You could easily add ground beef, chicken, pork or seafood to this if you choose to. Eating well doesn’t have to be expensive or complicated. Sometimes the best meals come from simple ingredients and a little creativity.
This vegetarian tostada is proof that you don’t need meat to create a delicious, satisfying meal. Give it a try and make it your own by adding your favorite toppings and ingredients.
